Ingredients sigari 4 italian cheese garlic mushroomsundried tomato and spinach pizza
1/2 tsp active dried yeast
1 pinch of granulated sugar
450 grams type 00 strong white flour
1 tsp salt
2 tbsp olive oil
400 grams can chopped Italian tomatoes
1/4 cup passata
1 smoked clove garlic
1 tsp dried oregano
1 bay leaf
10 ml malt vinegar
1 pinch pinch salt and pepper each
1 topping
30 ml olive oil
1 clove smoked garlicchopped
350 grams mixed mushrooms
30 ml chopped fresh oregano
1 cup ricotta cheese
150 grams each gorgonzolafotina and mozzarella
16 sundried tomatoes
1 1/2 cup wilted or canned spinach
3 or 4 small leaves of torn fresh basil optional

to make dough put 300 ml warm water in a measuring jug.Add yeast and sugar leave for 5- 10 minutes,until it goes trophy.Sift the flour into large bowl and make a well in centre.Gradually pour in the yeast mixtureand the two tablespoons olive oil.Mix to make a smooth dough. Knew on lightly floured board for about 10 minutes until springy and elastic.Place in a floured bowl ,cover and leave to rise in a warm place.
Meanwhile make sauce.Put all ingredients up to the mushrooms (not included) listed in a saucepan cover and bring to boil,power heat,then remove lid and simmer for 20 minutes,until liquid has reduced.
To make topping heat oil in frying pan ,add garlic and mushrooms,season with salt and pepper,cook until mushrooms tender and golden,set aside.
Preheat oven ,knead the dough for 3 minutes.Divide into 4 equal pieces ,roll out into 4 rounds and place on pizza stones or baking sheet
Spoon sauce equally over rounds ,brush edges with olive oil,add mushrooms,sundried tomatoes ,canned spinach, oregano and cheeses.Bake for about,15 minutes until crisp and golden brown, garnish with oregano leaves.
Sprinkle a few torn basil leaves over the pizza before serving
