quinoa stir fry

Ingredients quinoa stir fry


1/2 cup Quinoa
1 1/4 cup Water
1 cup Frozen/Fresh Mixed Vegies (I used a mix of frozen corn peas & green beans)
1 Finely Chopped Carrot
1 Handful of Chopped Mushroom
2 Eggs
1 1/2 tbsp Olive Oil
1 Salt/Pepper to Taste
1/4 tsp Garlic Powder
1/4 tsp Oregano
1/2 tbsp Soy Sauce
1/4 tbsp Worcestershire Sauce

how to make quinoa stir fry


Cook Quinoa in water with an added pinch of salt until all the water has been absorbed


Once cooked, set aside and prep a skillet on med heat with only 1/2 tablespoon of the olive oil


Mix until all the veggies are cooked well and add in some salt and pepper to taste as they cook


Once veggies are cooked to your liking add in the garlic powder and oregano


Next (you can use the same skillet) push all the veggies to one side of the pan, add the remaining oil to the cleared out side and cook your two eggs here and add salt and pepper to taste (can also do this on a separate pan)


Once eggs are all scrambled and cooked, combine it with the veggies in the skillet


Once all combined add in cooked quinoa and mix in the sauces, once all incorporated taste and add any more salt, pepper or garlic powder you feel is missing


This is like fried rice expect without the rice! So this tastes best hot! Enjoy!
