1 avocado
4 large hard boiled eggs
2 tbsp plain greek yogurt
1 small plum tomato chopped
1/2 tbsp lemon juice
1 salt and pepper to taste

Pit and shell the avocado...
In a bowl combine yogurt, avocado and lemon juice. Give a quick Beat with beaters to incorporate.
Add egg yolk from the hard boiled eggs. Beat with beaters until creamy.
Tear or chop egg white into large bite sized pieces.
Add egg and tomato to creamed avocado mix. Fold in. Add salt and pepper to taste.
Serve and enjoy!
Great on plain white toast, marbled rye, etc.
