Ingredients quick and healthy potato salad
1 1/2 lb Red potatoes
1 cup nonfat plain yogurt
1/3 cup minced red onion
1/3 cup thinly sliced celery
1/4 cup minced dill pickles
1 tbsp juice from pickle jar
1/2 tbsp yellow mustard
1/4 tsp sea salt
1 freashly ground pepper
1 chopped parsley

Place whole potatoes in oven at 425°F and bake for 30 minutes.
Remove from oven and allow potatoes to cool.
Cut potatoes into bite-size pieces.
Place in a large bowl with remaining ingredients.
Stir well to mix.
