parsee style eggs

Ingredients parsee style eggs


2 tbsp butter
1 yellow onion chopped
1/4 tsp turmeric
2 green chillis (choose the heat you like) sliced
2 ripe tomatoes chopped roughly
3 tbsp chopped cilantro leaf
2 eggs
1 pinch salt and ground black pepper

how to make parsee style eggs


Prepare all the veg and chop the cilantro


Beat the eggs - to beat them really well, I break them into a clean jar, put the lid on and give them a vigorous shake for 30 seconds


Melt butter in a cast iron skillet


Add onions and cook for two minutes on medium heat


Add turmeric and cook for another minute


Add the chillis, tomatoes and cilantro and cook for 30 seconds, stirring


Add the eggs, and cook, stirring for 2 minutes


Serve on hot buttered toast (optional)
