Ingredients corn avocado and tomato salad
2 tbsp olive oil
1 tbsp lime juice
1/4 cup cilantro chopped
1/4 tsp salt
1/4 tsp ground pepper
2 1/2 cup fresh cooked corn kernels (about 5 ears)
1 1/2 cup diced avocado
1 pints quartered cherry tomatoes
1/2 cup red onion finely diced

In a large bowl, whisk the olive oil, lime juice, cilantro, salt, and pepper together
Add the corn, avocado, tomatoes, and onion and toss to mix
Serve at room temperature with blue tortilla chips
